Overnight French Toast Casserole

Ingredients
  

  • 1 loaf of French bread
  • 8 eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 tsp. vanilla
  • 1 tsp. cinnamon

Crumb Topping

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, cold and grated with a cheese grater

Instructions
 

  • Lightly grease a 9x13 casserole dish.
  • Cut French bread loaf into 1 inch chunks and add them to the casserole greased casserole dish.
  • In a large bowl mix, milk, eggs, sugar, heavy cream, vanilla, and cinnamon.
  • Pour egg mixture evenly over the bread, making sure to coat all the pieces. If necessary give the mixture a stir using a spatula. You want the bread to be evenly coated and wet.
  • Cover your pan with saran wrap and place it in the fridge overnight, or for at least 6 hours.

Crumb Topping

  • To make crumb topping ( this can be made ahead and refrigerated) combine flour, brown sugar, cinnamon, and salt and mix well to combine.
  • Add grated butter and mix together until it forms a crumble. Cover with saran wrap or place in a ziplock bag and place it in the fridge.

Baking Instructions

  • Preheat oven to 350 F
  • Remove casserole dish from the fridge, remove saran wrap, and sprinkle crumb topping over top of casserole.
  • Bake uncovered for 40-45 minutes or until the top is golden brown and the bread had puffed up.
  • Serve with maple syrup and powdered sugar. Enjoy!
