I am going to change your life with this BLT Waffle Grilled Cheese sandwich recipe. Made with crispy bacon, a creamy avocado spread, crisp tomatoes, and gooey cheese all on a waffled buttermilk biscuit. So good your family will want this for every meal.
Preheat oven to 400˚F. Place bacon on a parchment paper lined baking sheet in a single layer. Bake for 20 minutes or until browned and crisp then transfer to a paper towel-lined plate to cool. Set aside.
While Bacon is cooking preheat a waffle iron to a medium-high setting.
In a medium bowl, add a peeled and seeded avocado, black pepper, fresh cilantro, salt, and garlic powder. Mash with a fork until it reaches your desired consistency. Set aside.
One at a time place each biscuit into the waffle iron. Cook until golden brown, remove and set aside. Repeat until all biscuits are cooked.
Line a baking sheet with parchment paper and set aside.
With a small spatula, spread avocado mixture on bottom waffle biscuit. Then, add 1 slice of provolone cheese. Next, add bacon, tomato and one more slice of provolone cheese. Add a waffle biscuit to the top and place on baking sheet. Repeat until all sandwiches are put together.
Cover sandwiches with foil and bake at 400˚F for 10-15 or until cheese has completely melted.
