  • 1 cup butter
  • ½ cup brown sugar
  • 2 tsp vanilla extract
  • cups oatmeal
  • cups chocolate chips (I use semisweet)
  • ¾ cup peanut butter

  • Line an 8x8 or 9x9 inch square baking dish with parchment paper. Leave the edges long enough that that they hang over the sides of the pan. This will make removing the bars easier.
  • In a medium saucepan, melt butter and brown sugar over medium heat until the butter has melted and the sugar has dissolved.
  • Add in vanilla, and slowly start mixing in the oats. Cook over low heat for 3-3½ mins until the ingredients are blended.
  • Pour half of the oat mixture into the lined baking dish evenly spreading and pressing the mixture into the pan.
  • For the chocolate filling, melt the peanut butter and chocolate chips together in the microwave until it is smooth.
  • Using about ¾ of the chocolate filling, pour it over the oatmeal crust, making sure to spread it out evenly.
  • Pour the remaining oatmeal mixture over the top of the filling, and press it in gently.
  • Finally, drizzle the remaining chocolate over the top.
  • Refrigerate for 1-2 hours or until the bars are completely cool. Cut and serve!
