In a small bowl combine brown sugar, mustard powder, sea salt, black pepper, paprika, onion powder, and cayenne pepper. Whisk together until all the clumps of brown sugar have been broken up.
Prepare your grill for cooking. Spray the grates with a non-stick cooking spray. Then preheat the grill on medium high (around 400 degrees F) for 10 minutes.
Prepare your pork chops by rubbing both sides with olive oil.
Sprinkle the dry rub to completely coat the pork chop and rub it into the meat.
Place the pork chops on the grill and cook for 7-8 minutes on each side. Until the internal temperature of the pork chops reaches 145 degrees F.
Remove from the grill and let the meat rest for 5 minutes, then serve.
