  • 12 oz. fettuccine noodles
  • 2 Tbsp. extra virgin olive oil
  • 1 lb. boneless skinless chicken breast
  • 3 Tbsp. Cajun seasoning, divided
  • 3 Tbsp. unsalted butter
  • 2 cups heavy cream
  • 1 cup shredded parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 diced tomato, optional
  • 1/4 cup chopped parsley, optional

  • Bring a large pot of water to boil and add 2 tsp. of salt. Add fettuccine noodles and cook until pasta is al-dente. Drain and set noodles aside.
  • While pasta is cooking, season both sides of the chicken breast with 2 Tbsp. of Cajun seasoning.
  • Heat extra virgin olive oil in a large skillet over medium heat. Add the chicken and cook for about 4 minutes on both sides or until chicken is cooked through and and the internal temperature reaches 165 degrees. Remove from the skillet cover with aluminum foil and allow the chicken to rest.
  • Melt butter in the skillet over medium heat. Gradually whisk in heavy cream, salt and pepper, and 1 Tbsp. Cajun seasoning. Allow it to come to a simmer, gradually whisking for 3-4 minutes.
  • Stir in parmesan cheese until sauce becomes thick. If it becomes too thick, stir in a little bit more heavy cream.
  • Add cooked fettucine noodles, and stir to coat well.
  • Serve immediately with sliced Cajun chicken, diced tomatoes, chopped parsley, and shredded parmesan cheese. Enjoy!
