Copycat Crumble Churro Cookie

These mouth-watering copycat Crumbl churro cookies will remind you of biting into a fresh hot churro, all in the comfort of your own home. The cookie itself is a moist yet fluffy light treat, and the cinnamon sugar frosting gives it the rich and delectable flavor you crave from a churro. This recipe is great for entertaining guests!

Ingredients
  

Cookie Dough

  • 1 cup salted butter (softened)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp vanilla
  • 2 tbsp corn starch
  • 2 large eggs
  • 1 tsp baking powder
  • ½ tsp baking soda
  • tsp cinnamon
  • ½ tsp salt
  • cup all-purpose flour

Cinnamon and Sugar Coating

  • ½ cup granulated sugar
  • 1 tsp cinnamon

Cinnamon Frosting

  • 1 cup salted butter (softened)
  • 4 cup powder sugar
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 3 tsp vanilla

Instructions
 

  • Preheat your oven to 350°, and line a baking sheet with parchment paper. Set aside.
  • Cream together butter, brown sugar, granulated sugar until light and fluffy. Add in eggs and vanilla, and mix well.
  • Add in corn starch, baking powder, baking soda, salt, cinnamon, and mix well.
  • Slowly mix in flour until well blended.
  • Using a 1½ cookie scooper, scoop dough into cinnamon and sugar mixture and roll it until the dough is completely covered. Place them on the lined cookie sheet evenly spaced apart. Bake for 8-10 mins. until the cookie is slightly golden around the edge.
  • Let the cookies cool for a couple of mins and place them on a cooling rack.

Cinnamon Frosting

  • Mix together butter, and vanilla until light and fluffy. Add in cinnamon, and brown sugar until well combined. Slowly add in powder sugar until mixed well.
  • Once the cookies are completely cooled, frost them using a piping bag and a Wilton 35 tip, or you can cut the tip off a ziplock bag and frost the cookies.
  • Sprinkle leftover cinnamon and sugar on top of the frosted cookie. Enjoy!
