Ingredients
  

  • 1 1/2 lbs. chicken breast, cut into cubes
  • 1 Tbsp. olive oil
  • 1 pkg. fajita seasoning
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 yellow onion, sliced
  • 2 tsp. minced garlic
  • 1 cup half and half
  • 3/4 cup Monterey jack cheese, shredded
  • juice from 1/2 lime
  • 8 oz. pasta noodles, cooked al-dente

Instructions
 

  • Cook pasta according to package directions until al-dente.
  • While pasta is cooking, heat olive oil in a large skillet over medium-high heat, add cubed chicken breast and fajita seasoning. Stir chicken and seasoning to combine well.
  • Cook chicken for 2-3 minutes, then add sliced peppers and onion.
  • Cover and continue to cook until chicken is completely cooked and peppers and onions are slightly softened.
  • Stir in minced garlic and continue to cook for 30 seconds.
  • Pour in half and half and shredded cheese, stir to combine. Simmer over low heat until slightly thickened.
  • Add lime juice and stir well.
  • Add cooked pasta and stir to coat all the ingredients well.
  • Serve immediately. Top with shredded cheese and chopped cilantro if desired.
