Bruschetta Chicken Pasta

This Best Bruschetta Chicken Pasta Recipe is a zesty, flavorful meal of tender, juicy chicken, flavorful spices, tangy tomato and onion, all mixed together with thin spaghetti noodles.  This tasty chicken pasta dinner will be a hit with your entire family!

Ingredients
  

  • 16 oz. thin spaghetti noodles
  • 2-3 large chicken breasts
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 cup olive oil
  • 2 tsp. minced garlic
  • 1/2 yellow onion, diced
  • 5-6 romat tomatoes, diced
  • 2 Tbsp. balsamic vinegar
  • 1/2 cup shredded parmesan cheese
  • balsamic glaze for serving optional

Instructions
 

  • Cook pasta according to package directions; Drain and rinse in cold water, set aside.
  • While the pasta is boiling, season chicken with basil, oregano, garlic powder, and salt. Heat 1 teaspoon of oil in a large skillet over medium heat and sear chicken until browned on both sides and cooked through. Remove from pan; set aside and allow to rest.
  • Add the remaining olive oil to the same hot skillet and add garlic and diced onion. Sauté the garlic and red onion until garlic is fragrant (about 1 minute). Turn off heat. 
  • Add in diced tomatoes, toss them lightly in the heat to warm them through and combine all of the flavors. Add the pasta into the skillet with the tomatoes and toss to combine. 
  • Add in the balsamic vinegar and parmesan cheese and toss to coat well. Season with salt and pepper to your taste. Slice the chicken; add to pasta. Toss the pasta with all of the ingredients until well combined.
  • Top with extra parmesan cheese (OPTIONAL) and serve immediately with balsamic glaze (optional).
