Classic Macaroni Salad

This easy classic Macaroni salad recipe has all of your favorite add-ins like, bell pepper, celery, red onion, tossed in a creamy homemade dressing. It's the perfect side dish for any BBQ or potluck with friend and family.

Ingredients
  

  • 1 lb. elbow macaroni
  • 2 Tbsp. olive oil
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup celery, chopped
  • 2 Tbsp. sweet pickle relish
  • 1 cup mayonnaise I prefer lite mayo
  • 1/8 cup white vinegar
  • 1 Tbsp. sugar
  • 2 Tbsp. yellow mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions
 

  • Bring a large pot of water to a boil and cook pasta until al dente.
  • Once pasta is al dente, drain water and rinse pasta in cold water. Allow noodles to drain thoroughly and then toss pasta in a little olive oil. This will keep pasta from clumping and becoming dry.
  • In a small mixing bowl combine mayo, sugar, white vinegar, sweet relish, mustard, salt and pepper and whisk until combined.
  • Add macaroni, chopped onion, bell pepper, celery, and dressing to a large mixing bowl and toss ingredients to coat well. Sprinkle with paprika if desired.
  • Cover and store in the fridge until ready to serve. Enjoy
