When it comes to your favorite cookies, why should you settle for ordinary? These Copycat Crumbl Cornbread Cookies are made with cornmeal and taste just like a slice of sweet honey cornbread in cookie form.
Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl beat softened butter, brown sugar, and granulated sugar until combined.
Add eggs, honey, and vanilla. Continue beating ingredients until smooth and creamy.
Add flour, cornmeal, cornstarch, salt, and baking powder to wet ingredients. Mix until just combined. Dough may be thick but not too sticky.
Cover and place dough in the fridge to chill for at least 30 minutes.
Remove from the fridge and preheat oven to 350 degrees.
For large Crumbl cookies, scoop out 1/3 cup of dough and roll into a ball. Place up to 6 dough balls onto prepared baking sheet and bake in a preheated oven for 13-15 minutes.
Allow cookies to cool completely on a wire rack before adding honey butter.
Honey Butter
While cookies are cooling prepare the honey butter. Combine softened butter and honey in a small mixing bowl and beat with a hand mixer until smooth and creamy.
Add powdered sugar and vanilla. Continue beating for 1-2 minutes or until combined well.
Add a scoop of honey butter to each cookie and drizzle a little honey over cookies if desired. Enjoy!
