Cowboy Caviar Recipe

Cowboy Caviar is one of my favorite appetizers! It is loaded with avocado, black beans, and veggies all tossed in a zesty dressing. It is such an easy dip to make and has the perfect blend of flavors. Perfect for your next BBQ or game day get-together.

Ingredients
  

  • 2 tsp apple cider vinegar
  • tsp extra virgin olive oil
  • ½ lime (fresh squeezed)
  • 2 tbsp honey
  • ¼ tsp salt
  • ½ tsp ground black pepper
  • 1 clove garlic (minced)
  • 1 avocado (diced)
  • 15 oz canned black beans (drained and rinsed)
  • 15 oz canned whole kernel corn (drained)
  • cup red onion (diced)
  • 2 Roma tomatoes (diced)
  • ½ cup fresh cilantro (chopped)

Instructions
 

  • In a small bowl, whisk together the apple cider vinegar, olive oil, lime juice, honey, salt, pepper, and garlic. Set aside.
  • Dices all the veggies, then drain and rinse the black beans.
  • Add the avocado, black beans, corn, red onion, tomatoes, and cilantro and mix.
  • Pour prepared dressing over the bean and vegetable mixture. Then, gently toss with a spoon until everything is well coated in the dressing.
  • Serve with your favorite tortilla chips.
