This easy cowboy stew recipe makes a hearty, cozy dinner that will have your whole family asking for seconds (and thirds!). With ground beef and sausage, onion, carrots, Rotel tomatoes, pinto beans, potatoes, peas, and spices, this broth based soup is a filling dinner that is packed with flavor.

Ingredients
  

  • 1 lb. ground beef
  • 1 pkg. kielbasa sausage, sliced
  • 1 small onion, diced
  • 2-3 medium carrots, sliced
  • 3 tsp. minced garlic
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 2 10 oz. cans Rotel tomatoes
  • 2 15 oz. cans pinto beans, drained
  • 3 cups low sodium beef broth
  • 3 medium yukon gold potatoes, peeled and diced
  • 1 cup frozen peas
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt

Instructions
 

  • In a large pot cook ground beef over medium heat, drain extra grease.
  • Add diced onions, sliced carrots, and kielbasa sausage to the large pot and continue cooking for 4-5 minutes.
  • Reduce heat to low and add minced garlic, chili powder, cumin, and paprika. Stir to combine well.
  • Add Rotel tomatoes, pinto beans, beef broth, and potatoes. Increase heat to medium and bring to a boil. Once boiling, reduce heat to simmer and continue cooking until potatoes are tender.
  • Add frozen peas, salt and pepper, and continue cooking for 2-3 minutes. Serve warm and Enjoy!
