Creamy Cajun Shrimp Pasta

Ingredients
  

  • 8 oz. Spaghetti noodles
  • 4 Tbsp. unsalted butter
  • 1 1/2 tsp. minced garlic
  • 3 1/2 tsp. Cajun seasoning more or less to taste
  • 1 lb. shrimp, patted dry if using frozen, thaw first
  • 4 oz. cream cheese, softened
  • 1 cup milk
  • 3/4 cup freshly grated parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 red bell pepper, sliced
  • 1 yellow or orange bell pepper, sliced

Instructions
 

  • Cook spaghetti noodles according to package directions until al-dente. Drain and set aside.
  • Season both sides of shrimp with Cajun seasoning.
  • In a large skillet, melt butter and add minced garlic. Sauté for 1 minute. Add sliced bell peppers, salt, and pepper, sauté until slightly tender.
  • Once peppers are tender, add shrimp and cook for 2-3 minutes per side or until shrimp is slightly pink. Do not overcook shrimp.
  • Add milk and cream cheese to skillet and stir until cream cheese has melted.
  • Add cooked spaghetti noodles and parmesan cheese to skillet and stir to combine. Serve immediately with more grated parmesan cheese if desired. Enjoy!
