Easy Almond Poppyseed Bread Recipe

Ingredients
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 tsp. lemon zest
- 1 tsp. vanilla
- 1 1/2 tsp. almond extract
- 3 eggs
- 1 2/3 cup flour
- 2 Tbsp. poppy seeds
- 1 tsp. baking powder
- 1/8 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup plain Greek yogurt or sour cream
- 1/4 cup milk
- 2 Tbsp. lemon juice
Glaze Ingredients
- 1/2 cup powdered sugar
- 1 Tbsp. milk
- 1/2 tsp. almond extract
Instructions
- Preheat oven to 425 degrees and spray an 8x4 inch loaf pan or line it with parchment paper. Set aside.
- In a large mixing bowl beat butter, sugar, lemon zest, vanilla, and almond extract until light and fluffy. Add eggs and mix until combined.
- Add in Greek yogurt, milk, and lemon juice until mixed thoroughly.
- Slowly add in flour, poppy seeds, baking powder, baking soda, and salt. Mix until a smooth batter forms.
- Pour batter into a prepared loaf pan and bake in a preheated oven for 8 minutes at 425 degrees.
- Leave bread in the oven and reduce heat to 350 degrees and continue cooking for another 40-45 minutes or until a toothpick comes out clean.
- Remove from oven and allow bread to cool completely.
Almond Glaze
- In a small mixing bowl, whisk powdered sugar, milk, and almond extract until smooth.
- Once bread has cooled, drizzle glaze over bread and enjoy!
