With rice, imitation crab meat, avocado, cucumber, carrots, and a creamy sauce, you’ll want to make this sushi bowl recipe again and again.
2cupssushi riceI used Mahatma sushi rice from Kroger
2cupcold water
5Tbsp.seasoned rice vinegar
8oz.imitation crab meat, chopped
1largeavocado, dicedmore or less
1/2English cucumber, slicedmore or less
1smallcarrot, grated
1-2nori sheet, crumbled (optional)
1Tbsp.black sesame seeds
1/4cupmayonnaise
1Tbsp.siracha sauce
low sodium soy sauce for serving

Rinse rice in a fine mesh strainer until the water runs clear. Don't skip this step.
Pour rinsed rice into a medium size saucepan and add cold water. Heat over medium high heat until it comes to a boil. Cover and reduce heat to simmer for 15 minutes or until all the liquid is absorbed and rice is fully cooked. Set aside to cool.
In a small mixing bowl stir mayonnaise and siracha until combined. Set aside.
Once rice has had a chance to cool completely, pour vinegar over rice and stir to combine.
To assemble the bowl, divide rice between 4 bowls and top with crab, cucumber, avocado, carrots, and crumbled nori.
Top with sesame seeds and spicy mayo. Serve with a side of soy sauce if desired. Enjoy!
