This easy patriotic fruit pizza recipe with sugar cookie crust is the perfect dessert for parties, potlucks, holidays, and summer gatherings. A soft homemade sugar cookie crust is topped with a sweet cream cheese layer and plenty of fresh fruit for a colorful treat that's as beautiful as it is delicious. Whisk the flour, cornstarch, baking powder, and salt together in a medium bowl.
In a large mixing bowl beat softened butter and sugar until smooth and creamy, about 3 minutes. Add in egg and vanilla and continue mixing until combined.
Slowly add in the dry ingredients and mix until just combined, don't over mix dough. Place dough in the fridge for 20-30 minutes.
Preheat oven to 350 degrees and grease a 12-inch pizza pan or a 9x13 pan with nonstick spray.
Spread chilled dough evenly onto prepared pan and bake for 15-17 minutes or until edges are golden brown. Avoid over baking.
Frosting
In a medium mixing bowl beat softened cream cheese, softened butter, powdered sugar, and vanilla until smooth and creamy.
Spread frosting over cooled sugar cookie crust and top with desired fruit. Cut into slices and serve chilled. Store leftovers in the refrigerator. Enjoy!
NOTE *If using cream for the white stripe, reserve 1/2 cup of cream cheese spread. In a medium mixing bowl beat heavy whipping cream until stiff peaks, stir in reserved cream cheese spread until smooth and creamy. Place into a piping bag and pipe white stripe. Sliced bananas also work great but be sure to add them right before serving*
