In a small bowl combine brown sugar, mustard powder, sea salt, black pepper, paprika, onion powder, and cayenne pepper. Whisk together until all the clumps of brown sugar have been broken up.
Prepare your grill for cooking. Spray the grates with a non-stick cooking spray. Then preheat the grill on medium high (around 400 degrees F) for 10 minutes.
Prepare your pork chops by rubbing both sides with olive oil.
