These banana oatmeal breakfast cookies are a great make ahead breakfast recipe for those busy weekday mornings. With only a few ingredients that you probably already have on hand, you can have this breakfast cookie recipe ready in under 30 minutes!
Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
In a large mixing bowl add bananas and mash with a fork. Stir in honey, applesauce, and vanilla until combined.
Add oats, cinnamon, salt, and chocolate chips and continue stirring until all ingredients are well combined.
Unsing a medium-large cookie scoop, place dough on prepared cookie sheet and bake in a preheated oven for 18-20 minutes or until tops are set and bottoms are browned.
