Healthy Banana Oatmeal Breakfast Cookie Recipe

These banana oatmeal breakfast cookies are a great make ahead breakfast recipe for those busy weekday mornings. With only a few ingredients that you probably already have on hand, you can have this breakfast cookie recipe ready in under 30 minutes!

Ingredients
  

  • 3 ripe bananas about 1 1/4 cups mashed
  • 2 Tbsp. honey
  • 1/4 cup applesauce
  • 1 tsp. vanilla extract
  • 2 cups old fashioned oats
  • 2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
  • In a large mixing bowl add bananas and mash with a fork. Stir in honey, applesauce, and vanilla until combined.
  • Add oats, cinnamon, salt, and chocolate chips and continue stirring until all ingredients are well combined.
  • Unsing a medium-large cookie scoop, place dough on prepared cookie sheet and bake in a preheated oven for 18-20 minutes or until tops are set and bottoms are browned.
  • Let cool on the baking sheet for 5 minutes. Serve warm or at room temperature. Enjoy1
