In a large Ziplock bag add chicken breast, olive oil, lemon juice, minced garlic, dried oregano, salt and pepper. Seal the bag and give it a good shake to combine all ingredients well. Place in the fridge for at least 30-60 minutes.
While the chicken is marinating, prepare the Tzatziki sauce by mixing Greek yogurt, cucumbers, garlic, lemon juice, salt and dill. Place in the fridge until ready to serve.
After the chicken has marinated, Place 1 Tbsp. olive oil in a medium to large skillet over medium-large heat. Add marinated chicken and cook until chicken is no longer pink and reaches an internal temperature of 165 degrees.
Assemble Greek chicken bowls by dividing cooked rice or quinoa between 4 bowls. Assemble chicken, shredded lettuce, tomatoes, cucumber, feta cheese, and red onion (optional)
Top each bowl with Tzatziki sauce and Olive Garden dressing and serve bowls immediately. Enjoy!
