Healthy Greek Chicken Bowls with Tzatziki

Ingredients
  

Greek Chicken Marinade

  • 1.5 lbs. chicken breasts
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. lemon juice
  • 3 tsp. minced garlic
  • 2 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Tzatziki Sauce

  • 1 1/4 cup Greek yogurt, plain
  • 1/2 cucumber, sliced and diced into small pieces absorb excess water by squeezing cucumber with a paper towel
  • 1 tsp. minced garlic
  • 1 Tbsp. lemon juice
  • 2 tsp. dried dill
  • 1 tsp. salt

Ingredients for assembling bowls

  • 4 cups cooked rice or quinoa
  • 4 cups shredded romaine lettuce
  • 2 cups grape tomatoes, cut in half
  • 2 cups cucumber, peeled and diced
  • 1 cup crumbled feta cheese
  • 1/2 cup red onion, diced optional
  • 1 Bottle Olive Garden Italian dressing

Instructions
 

  • In a large Ziplock bag add chicken breast, olive oil, lemon juice, minced garlic, dried oregano, salt and pepper. Seal the bag and give it a good shake to combine all ingredients well. Place in the fridge for at least 30-60 minutes.
  • While the chicken is marinating, prepare the Tzatziki sauce by mixing Greek yogurt, cucumbers, garlic, lemon juice, salt and dill. Place in the fridge until ready to serve.
  • After the chicken has marinated, Place 1 Tbsp. olive oil in a medium to large skillet over medium-large heat. Add marinated chicken and cook until chicken is no longer pink and reaches an internal temperature of 165 degrees.
  • Assemble Greek chicken bowls by dividing cooked rice or quinoa between 4 bowls. Assemble chicken, shredded lettuce, tomatoes, cucumber, feta cheese, and red onion (optional)
  • Top each bowl with Tzatziki sauce and Olive Garden dressing and serve bowls immediately. Enjoy!
