Preheat oven to 425 degrees and prepare muffin pan with liners. Set aside.
In a large mixing bowl whisk flour, bran, baking powder, baking soda, salt, and cinnamon until combined.
Add egg, honey, melted coconut oil, applesauce, vanilla, and milk to dry ingredients. Whisk until incorporated well. Fold in optional blueberries, raisins, etc.
Spoon batter evenly into liners. Place in preheated oven for 5 minutes at 425 degrees. Keep muffins in the oven and reduce temperature to 350 degrees and continue baking for an additional 14-15 minutes or until a toothpick comes out clean.
