Healthy Oat Bran Muffins Recipe

Whip up a batch of these healthy oat bran muffins recipe for a fiber-rich, naturally sweetened treat! Made with oat bran, honey or maple syrup, and a touch of cinnamon, these muffins are moist, flavorful, and perfect for breakfast or a snack. Add blueberries, raisins, or chocolate chips for a delicious twist!

Ingredients
  

  • 1 1/2 cups flour
  • 1 cup oat bran I like Bob's Red Mill
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 egg
  • 1/2 cup honey or pure maple syrup
  • 1/3 cup coconut oil, melted
  • 1/3 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1 cup milk
  • 2/3 cup blueberries, raisins, chocolate chips, nuts (optional)

Instructions
 

  • Preheat oven to 425 degrees and prepare muffin pan with liners. Set aside.
  • In a large mixing bowl whisk flour, bran, baking powder, baking soda, salt, and cinnamon until combined.
  • Add egg, honey, melted coconut oil, applesauce, vanilla, and milk to dry ingredients. Whisk until incorporated well. Fold in optional blueberries, raisins, etc.
  • Spoon batter evenly into liners. Place in preheated oven for 5 minutes at 425 degrees. Keep muffins in the oven and reduce temperature to 350 degrees and continue baking for an additional 14-15 minutes or until a toothpick comes out clean.
  • Remove from oven and allow to cool. Enjoy!
