Preheat oven to 350 degrees and spray a 9x5 loaf pan, set aside.
In a medium size bowl whisk flour, baking powder, and salt until combined.
In a large bowl beat eggs with a hand mixer for 30 seconds. Add in sugar and oil and continue beating for 1 minute or until light and fluffy.
Add buttermilk, lemon zest, and lemon juice and beat until combined.
Add dry ingredients and shredded zucchini to wet ingredients. Mix until just combined with a wooden spoon or spatula.
Pour batter into prepared bread loaf pan. Bake in preheated oven for 40-45 minutes or until a toothpick comes out clean when inserted.
Let cool before removing bread from pan.
