Oatmeal Raisin Cookies

Ingredients
  

  • 1 cup Raisins
  • ¾ cup Brown sugar
  • ¼ cup Granulated Sugar
  • ¾ cup Butter (softened)
  • 2 Eggs
  • 2 tsp Vanilla
  • 1 tsp Baking Soda
  • 3 tsp Corn starch
  • 2 tsp Cinnamon
  • ½ tsp Salt
  • cup Flour
  • cup Quick Oats

Instructions
 

  • Pre-heat oven to 350°. Line a baking sheet with parchment paper and set it aside.
  • Soak raisins in a bowl of water.
  • In a large mixing bowl using a whisk attachment add softened butter, brown sugar, and granulated sugar. Mix until light and fluffy.
  • Add eggs and vanilla and mix well.
  • Next, add baking soda, cinnamon, salt, and corn starch. Mix until well blended.
  • Switch to a paddle attachment and slowly add in flour. When flour is mixed in well add in quick oats and mix until well combined.
  • Drain raisins well and add them to the dough. Mix just until the raisins are well incorporated.
  • Using a 1½ inch cookie scoop, and scoop the cookie dough onto the lined baking sheet.
  • Bake cookies for 8-10 mins. until slightly golden around the edges. Remove the cookies from the oven and let them cool completely before eating.
