1 cup Raisins ¾ cup Brown sugar ¼ cup Granulated Sugar ¾ cup Butter (softened) 2 Eggs 2 tsp Vanilla 1 tsp Baking Soda 3 tsp Corn starch 2 tsp Cinnamon ½ tsp Salt 1¾ cup Flour 2¾ cup Quick Oats

Pre-heat oven to 350°. Line a baking sheet with parchment paper and set it aside.
Soak raisins in a bowl of water.
In a large mixing bowl using a whisk attachment add softened butter, brown sugar, and granulated sugar. Mix until light and fluffy.
Add eggs and vanilla and mix well.
Next, add baking soda, cinnamon, salt, and corn starch. Mix until well blended.
Switch to a paddle attachment and slowly add in flour. When flour is mixed in well add in quick oats and mix until well combined.
Drain raisins well and add them to the dough. Mix just until the raisins are well incorporated.
Using a 1½ inch cookie scoop, and scoop the cookie dough onto the lined baking sheet.
Bake cookies for 8-10 mins. until slightly golden around the edges. Remove the cookies from the oven and let them cool completely before eating.
