Ingredients
  

  • 8 large flour tortillas
  • 1 rotisserie chicken, meat shredded
  • 1/4 cup lime juice
  • 1/3 cup honey
  • 3 tsp. minced garlic
  • 1 Tbsp. chili powder
  • 3 cups shredded Monterey Jack cheese
  • 2 cups cooked cilantro lime rice homemade or store bought
  • 1 can black or pinto beans, drained
  • salsa for serving
  • chopped cilantro for garnish

Sauce

  • 16oz jar salsa Verde
  • 1 cup heavy cream

Instructions
 

  • In a large bowl whisk together lime juice, honey, garlic, and chili powder. Add shredded chicken and toss to coat completely.
  • Cover and place in the fridge for 15-20 minutes.
  • In a small mixing bowl whisk salsa Verde and heavy cream until combined well. Set aside.
  • Prepare rice as directed to package directions. Or find our homemade rice recipe here.
  • Preheat oven to 350F and spray a baking dish with cooking spay.
  • Evenly fill each tortilla with marinated chicken, rice, beans, and shredded cheese.
  • Fold up both ends and roll up tightly. Place burritos in baking dish.
  • Spoon salsa Verde sauce over burritos and sprinkle with extra cheese.
  • Bake in a preheated oven for 20-30 minutes or until warm throughout and cheese has melted.
  • Serve with salsa, chopped cilantro, and sour cream. Enjoy!
