Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 6 Tbsp. unsalted butter, melted and cooled slightly
  • 2/3 cup brown sugar
  • 1 egg
  • 1 1/2 tsp.. vanilla
  • 1 1/2 cups mashed ripe bananas

Instructions
 

  • Preheat oven to 375°F and line a 12-count muffin pan with muffin liners and set aside.
  • In a large mixing bowl, whisk together the melted butter, brown sugar, egg, vanilla extract, and mashed banana until fully combined.
  • Add all-purpose flour, baking soda, ground cinnamon, and salt until just combined. Don't over mix the batter.
  • Evenly distribute the batter between all 12 liners in the muffin pan.
  • Bake in a preheated oven for 16-20 minutes or until a toothpick inserted into the center of the muffins comes out clean. Remove from the oven and cool for 5 minutes before serving. Enjoy!
