Bang Bang Chicken Recipe (Cheesecake Factory Copycat)

Ingredients
  

  • 1 lb. boneless chicken breast, cut into cubes
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. olive oil
  • 1/2 yellow onion, chopped
  • 1 large carrot julienned and cut into 1 inch pieces
  • 2 tsp. minced garlic
  • 3 tsp. curry powder
  • 1 13.5 oz. can coconut milk
  • 3/4 cup low sodium chicken broth
  • 3 Tbsp. brown sugar
  • 3 Tbsp. smooth peanut butter
  • 2 Tbsp. soy sauce
  • 2 Tbsp. fresh lime juice
  • 2 Tbsp. Thai sweet chili sauce
  • 1 Tbsp. cornstarch
  • 1 Tbsp. cold water
  • 1/2 cup frozen peas
  • 1/4 cup chopped peanuts
  • rice for serving

Instructions
 

  • In a large skillet heat olive oil over medium-high heat. Season chicken with salt and pepper, and cook until no longer pink. (chicken will continue cooking at the end0
  • Remove chicken from skillet and set aside. Add remaining olive oil and onions and sauté until tender.
  • Add carrots, garlic and curry powder and sauté 1 minute. Turn heat to low and add coconut milk, chicken broth, brown sugar, peanut butter, soy sauce, lime juice, and sweet chili sauce. Whisk to combine all ingredients.
  • Bring sauce to a simmer and cook until carrots are crisp-tender, about 5 minutes.
  • In a small cup stir 1 Tbsp. cornstarch with 1 Tbsp. cold water. Stir into sauce until slightly thickened.
  • Add frozen peas and cook until heated through, about one minute. If you would like a thinner sauce, thin with additional chicken broth or water.
  • Serve with white rice and top with chopped peanuts. Enjoy!
