  • 1 13.5 oz. can coconut milk
  • 3/4 cup low sodium chicken broth
  • 3 Tbsp. brown sugar
  • 3 Tbsp. smooth peanut butter
  • 2 Tbsp. soy sauce
  • 2 Tbsp. fresh lime juice
  • 2 Tbsp. Thai sweet chili sauce
  • 1 Tbsp. cornstarch
  • 1 Tbsp. cold water
  • 1/2 cup frozen peas
  • 1/4 cup chopped peanuts

How to Make This Bang Bang Chicken Recipe

INSTRUCTIONS

Step 1: In a large skillet, heat olive oil over medium-high heat. 

Step 2: Season chicken with salt and pepper, and cook until no longer pink. (chicken will continue cooking at the end)

Step 3: Remove chicken from skillet and set aside. Add remaining olive oil and onions and sauté until tender.

Step 4: Add carrots, garlic and curry powder and sauté 1 minute. 

Step 5: Turn heat to low and add coconut milk, chicken broth, brown sugar, peanut butter, soy sauce, lime juice, and sweet chili sauce. 

Step 6: Whisk to combine all ingredients.

Step 7: Bring sauce to a simmer and cook until carrots are crisp-tender, about 5 minutes.

Step 8: In a small cup stir 1 Tbsp. cornstarch with 1 Tbsp. cold water. Stir into sauce until slightly thickened.

Step 9: Add frozen peas and cook until heated through, about one minute. If you would like a thinner sauce, thin with additional chicken broth or water.

Step 10: Serve with white rice and top with chopped peanuts.
