Chicken Fried Rice

Homemade Chicken Fried Rice is such an easy recipe to make. It has the best flavor and is packed with juicy and tender chicken. Complimented with peas, carrots, white rice, and the perfect blend of seasonings. This will be your go-to dish when you are craving Chinese rice

Ingredients
  

  • 1 tbsp. vegetable oil
  • tbsp low sodium soy sauce
  • 1 lb. boneless, skinless chicken breasts (cut into ½ pieces)
  • 3 cups long grain white rice (cooked)
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • ½ tsp ground black pepper
  • cups frozen peas and carrots (thawed)
  • 2 large eggs (lightly beaten)
  • 3 tbsp low sodium soy sauce
  • ¼ cup green onions (thinly sliced diagonally)
  • 2 tbsp sesame oil

Instructions
 

  • In a large skillet or wok over medium-high heat, add vegetable oil and minced garlic. Saute for 1 minute stirring occasionally. Then, add 1 1/2 tbsp of soy sauce, black pepper, and cubed chicken. Stir occasionally and cook for 4-5 minutes or until chicken is lightly browned and cooked through. Remove and set aside
  • In the same pan or wok, add sesame oil and heat up. Then, add onion, peas, and carrots and saute for 3-4 minutes or until onions are translucent.
  • In the same pan move cooked vegetables to one side of the pan. Then, add lightly beaten eggs on the other side. With a spatula, scramble the eggs until they are still slightly runny. Then combine eggs with the cooked vegetables and stir and continue to cook until eggs are completely cooked.
  • Add cooked rice, cooked chicken, and soy sauce to the pan. Stir until completely combined and the chicken is reheated. Turn off heat, add sliced green onion and stir until combined.
  • Serve while hot. Enjoy!
