Crispy Oven Baked Chicken Taquitos

These Crispy Oven Baked Chicken Taquitos are stuffed with juicy chicken, cream cheese, Mexican cheese, and spices, and then baked to a golden-brown crispy perfection. The whole family will be raving about these delicious taquitos.

Ingredients
  

  • 2 1/2 cups cooked shredded chicken
  • 6 oz. cream cheese, softened
  • 2 Tbsp. fresh lime juice
  • 1/2 cup salsa verde
  • 1/4 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/4 cup chopped cilantro
  • 2 Tbsp. chopped green onion
  • 2 cups shredded fiesta blend cheese Monterey Jack or pepper Jack cheese also works well
  • 12 fajita size flour tortillas

Instructions
 

  • Preheat oven to 400F and spray a large baking sheet with nonstick cooking spray.
  • In a large bowl whisk together softened cream cheese, lime juice, and salsa verde until smooth and creamy.
  • Stir in onion powder, chili powder, garlic powder, ground cumin, chopped cilantro, and chopped green onions until well combined.
  • Add cooked shredded chicken and shredded cheese and stir well to combine all ingredients.
  • Spread about 1/4 cup chicken mixture onto each tortilla. Roll them up and place the seam side down on prepared baking sheet.
  • Spray rolled taquitos with baking spray and baked for 15-20 minutes or until the edges are golden brown.
  • Serve warm with salsa, sour cream, or ranch dressing. Enjoy!
