These No-Bake Birds Nest Cookies with Scotcheroo Base are a festive springtime treat that combines crunchy Rice Krispies, smooth peanut butter, sweet chocolate chips, and butterscotch chips formed into a nest and topped with speckled M&M’s or jelly beans for “eggs”.
In a large pot, heat corn syrup and sugar until simmering. Remove from heat and whisk in the peanut butter. Slowly stir in the Rice Krispies until they are completely coated.
Carefully shape the Rice Krispies mix into small mounded circles (I used a small bunt cake mold) and poke a small hole in the middle, make sure you don't poke all the way through. Place the shaped nests onto a piece of parchment paper and let them cool completely.
Using a microwave safe bowl add the milk chocolate chips and butter scotch chips. Microwave in 25 second intervals until the chocolate is completely melted.
Carefully dip the bottom of the nest in the melted chocolate. Scrape the excess chocolate off the bottom and place them chocolate side up on the parchment paper until the chocolate hardens.
Using a piping bag with a small round tip or a plastic bag with a small hole in the corner, drizzle the left over chocolate over the top of the birds nest. Place the jelly beans/ speckled M&M's in the nest, you can also use the chocolate to help keep the jelly beans in place.
