These No-Bake Birds Nest Cookies with Scotcheroo Base are a festive springtime treat that combines crunchy Rice Krispies, smooth peanut butter, sweet chocolate chips, and butterscotch chips formed into a nest and topped with speckled M&M’s or jelly beans for “eggs”.

How cute are these festive Birds Nest Cookies?! They make the perfect Easter treat, and you don’t even have to turn on your oven!  Whether you top these with speckled M&M’s or jelly beans, this tasty dessert looks like precious little bird nests with colorful pastel eggs –  and it’s all edible!

These No-Bake Birds Nest Cookies are fun to make as a family. Your kids will love getting to help! You’ll start by heating your corn syrup, sugar, and peanut butter, then tossing your cereal in the mixture. Then you will shape them into nests and let them cool.  While they are cooling, melt together your chocolate and butterscotch chips.  Dip the bottoms of the nests into the chocolate and let them harden.  Your kids will love to help with this next step – put any leftover chocolate into a piping bag and let them drizzle it over the nests. Once it has hardened, they can place the eggs on top!  You and your family will be ready to serve this cute little Easter treat.

Equipment Needed To Make These Simple Birds Nest Cookies

  • Bundt Cake Mold (Optional)

Ingredients For Your Birds Nest Cookies

  • Corn Syrup
  • Granulated Sugar
  • Peanut Butter
  • Rice Krispies
  • Milk Chocolate Chips
  • Butterscotch Chips
  • Speckled M&M’s or Jelly Beans

How To Make No Bake Birds Nest Cookies

  1. In a large pot, heat corn syrup and sugar until simmering. Remove from heat and whisk in the peanut butter. Slowly stir in the Rice Krispies until they are completely coated.
  2. Carefully shape the Rice Krispies mix into small mounded circles (I used a small bundt cake mold) and poke a small hole in the middle. Make sure you don’t poke all the way through. Place the shaped nests onto a piece of parchment paper and let them cool completely.
  3. Using a microwave-safe bowl add the milk chocolate chips and butterscotch chips. Microwave in 25-second intervals until the chocolate is completely melted.
  4. Carefully dip the bottom of the nest in the melted chocolate. Scrape the excess chocolate off the bottom and place the chocolate side up on the parchment paper until the chocolate hardens.
  5. Using a piping bag with a small round tip or a plastic bag with a small hole in the corner, drizzle the leftover chocolate over the top of the bird’s nest. Place the jelly beans/ speckled M&M’s in the nest, you can also use the chocolate to help keep the jelly beans in place.
  6. Once the chocolate has set, serve and ENJOY!!

What to Serve/Pair with Your No Bake Birds Nest

These bird nest treats are a great dessert for your Easter meal. Want to serve more than one dessert? Popular Substitutions & Additions

  • Miniature Cadbury eggs can be used in place of M&M’s or jelly beans for the candy eggs in these nests.
  • If you or someone in your family has a nut allergy, use sunflower butter instead of peanut butter. You can also use a different kind of nut butter other than peanut butter, like almond butter or cashew butter.

How To Store Scotcheroo Chocolate Birds Nest

These tasty No Bake Birds Nests will last for up to 3 days if they are stored properly. They can be stored at room temperature in a sealed, air-tight container. If you prefer to refrigerate them, you can, you will just want to set them out for a while before eating them so that they can soften up enough to bite into.

Can I use store-brand rice cereal instead of Rice Krispies?

While you technically can, I’ve found that the texture and crunch of the actual Rice Krispies hold up when dipped into melted chocolate much better than any other brand of this type of cereal.

Is there something that I can use instead of a small bundt mold?

Of course! You can use anything that will get these into the shape that you want. A small condiment bowl would also work, then just use your finger to poke a hole in the middle.

Can I melt the chocolate chips and butterscotch chips on the stovetop instead of in the microwave?

Sure, if this is your preferred method, you can melt your chocolate and butterscotch chips on the stove. I would use a double boiler and be sure not to overcook so that the mixture does not get too thick.
