2 cups rotini pasta 2 Tbsp. unsalted butter 1/2 yellow onion, diced 2 tsp. minced garlic 2 14.5 oz. cans Italian style diced tomatoes 3 cups low sodium chicken broth 1 tsp. dried parsley 1 tsp. dried oregano 2 tsp. Italian seasoning 1/2 tsp. salt 1/2 tsp. black pepper 2 cups rotisserie chicken, shredded 1 cup shredded parmesan cheese

Cook pasta al-dente according to directions on the back of the box, Drain, rinse, and set aside.
In a large pot add butter and onion. Sauté over medium heat until the onions become tender and translucent.
Add in garlic and sauté for an additonal 30 seconds.
Add diced tomatoes, chicken broth, and seasonings to the pot. Bring to a boil and reduce to simmer.
Stir in cooked shredded chicken and al-dente pasta, continue cooking for additional 3-4 minutes.
Serve immediately topped with parmesan cheese and fresh basil if desired. Enjoy!
