Easy Chicken Parmesan Soup

This Easy Chicken Parmesan Soup Recipe with Rotisserie Chicken is the perfect, cozy dinner for a cold winter evening. This broth based chicken soup with pasta, tomatoes, spices, and parmesan gives you all of the flavors that you could want in a deliciously flavorful comfort food.

Ingredients
  

  • 2 cups rotini pasta
  • 2 Tbsp. unsalted butter
  • 1/2 yellow onion, diced
  • 2 tsp. minced garlic
  • 2 14.5 oz. cans Italian style diced tomatoes
  • 3 cups low sodium chicken broth
  • 1 tsp. dried parsley
  • 1 tsp. dried oregano
  • 2 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded parmesan cheese

Instructions
 

  • Cook pasta al-dente according to directions on the back of the box, Drain, rinse, and set aside.
  • In a large pot add butter and onion. Sauté over medium heat until the onions become tender and translucent.
  • Add in garlic and sauté for an additonal 30 seconds.
  • Add diced tomatoes, chicken broth, and seasonings to the pot. Bring to a boil and reduce to simmer.
  • Stir in cooked shredded chicken and al-dente pasta, continue cooking for additional 3-4 minutes.
  • Serve immediately topped with parmesan cheese and fresh basil if desired. Enjoy!
