- 2 cups rotini pasta
- 2 Tbsp. unsalted butter
- 1/2 yellow onion, diced
- 2 tsp. minced garlic
- 2 14.5 oz. cans Italian style diced tomatoes
- 3 cups low sodium chicken broth
- 1 tsp. dried parsley
- 1 tsp. dried oregano
- 2 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 cups rotisserie chicken, shredded
- 1 cup shredded parmesan cheese
How To Make Easy Chicken Parmesan Soup
Step 1: Cook pasta al-dente according to directions on the back of the box, Drain, rinse, and set aside.
Step 2: In a large pot add butter and onion. Sautรฉ over medium heat until the onions become tender and translucent.
Step 3: Add in garlic and sautรฉ for an additional 30 seconds.
Step 4: Add diced tomatoes, chicken broth, and seasonings to the pot. Bring to a boil and reduce to a simmer.
Step 5: Stir in cooked shredded chicken and al-dente pasta, continue cooking for additional 3-4 minutes.
