In the cold winter months, Iโ€™m always looking for new variations of soup that I can make. This easy chicken parmesan soup has quickly become one of my favorites! It is a good way to switch it up from your usual chicken noodle soup and offers all of the flavors that you would find in chicken parm, but in soup form.  I love to enjoy a bowl of this tasty chicken soup curled up by the fireplace – itโ€™s just so cozy! 

Not only is this soup tasty, it also doesnโ€™t take long to make. You will start by cooking your pasta and sauteeing your onion and garlic. Then you add in your tomatoes, broth, and seasonings. Once it has boiled, add in your pasta and chicken. When you’re ready to serve, top your soup with parmesan and basil. I love that you can use rotisserie chicken for this soup – it is such a huge time saver! This chicken parmesan soup is so delicious and flavorful that it is sure to become a regular on your winter soup rotation!

Ingredients For Your Easy Chicken Soup Recipe

  • 2 cups rotini pasta
  • 2 Tbsp. unsalted butter
  • 1/2 yellow onion, diced
  • 2 tsp. minced garlic
  • 2 14.5 oz. cans Italian style diced tomatoes
  • 3 cups low sodium chicken broth
  • 1 tsp. dried parsley
  • 1 tsp. dried oregano
  • 2 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded parmesan cheese

How To Make Easy Chicken Parmesan Soup

Step 1: Cook pasta al-dente according to directions on the back of the box, Drain, rinse, and set aside.

Step 2: In a large pot add butter and onion. Sautรฉ over medium heat until the onions become tender and translucent.

Step 3: Add in garlic and sautรฉ for an additional 30 seconds.

Step 4: Add diced tomatoes, chicken broth, and seasonings to the pot. Bring to a boil and reduce to a simmer.

Step 5: Stir in cooked shredded chicken and al-dente pasta, continue cooking for additional 3-4 minutes.

Step 6: Serve immediately topped with parmesan cheese and fresh basil if desired. Enjoy!

What to Serve/Pair with Your Chicken Parmesan Soup

Popular Substitutions & Additions

I like to buy rotisserie chicken when it is on sale, shred it, and keep it in the freezer. When Iโ€™m ready to make this soup, Iโ€™ll just take out a bag of frozen shredded chicken the night before and let it thaw.

Feel free to replace the rotini pasta with a gluten free option.

If you donโ€™t want your soup to be quite so chunky, you can use crushed tomatoes in place of the diced tomatoes.

Storage & Leftovers

This chicken parmesan soup can be stored in the fridge for up to three days in an air-tight container. To reheat, either heat in a pot on the stovetop, or microwave individual portions until warm. 

You can also freeze this chicken parm soup! Once it has cooled completely, transfer it into a sealed, freezer safe container (I use a gallon size ziploc bag), and place it in the freezer. It will last for up to 3 months if stored properly. Completely thaw your chicken soup in the fridge before reheating.

Can I use a type of pasta other than rotini?

Sure, you can use any of your favorite types of pasta. I like to use Christmas shaped pasta during the holidays!

Is there a way to make this soup creamy?

Yes! If you like your soup to have more of a cream base, add in ยฝ cup of heavy cream right before you add in your chicken and your pasta.

Can I use a flavored rotisserie chicken in this chicken parmesan soup?

Sure, you will just want to make sure that the flavors of the chicken will blend well with the soup mixture.

How can I add a little more spice to this soup?

If you want to add more spice to the chicken soup, add in a dash of red pepper flakes.
