Easy Cuban Chicken and Rice Bowls (with Black Beans)

Easy Cuban chicken and rice bowls with black beans are a healthy, filling, and flavorful dinner option. These Cuban bowls have protein-packed chicken breast, filling brown rice, tasty black beans, sweet pineapple, creamy avocado, and zesty lime and orange, all perfectly seasoned and drizzled with Cuban sauce.

Ingredients
  

  • 1 lb. boneless chicken breasts
  • salt and pepper to season chicken
  • 1 Tbsp. olive oil
  • 4 cups cooked brown rice
  • 1 15oz. can black beans, drained and rinsed
  • 1 small fresh pineapple, cubed
  • 1 large avocado, diced
  • 1 large lime, juiced
  • 2 oranges, juiced
  • 2 tsp. chopped garlic
  • 2 tsp. ground cumin
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 4 tsp. low sodium soy sauce

Instructions
 

  • Cook rice according to package directions and set aside.
  • Add olive oil to a large skillet over medium-high heat. Season chicken breasts with salt and pepper to taste. Cook chicken until cooked through and internal temperature reaches 165 degrees. Remove from skillet and allow to rest. Cut rested chicken into bite size pieces.
  • While the chicken is cooking, chop pineapple, and avocado. *you can toss the avocado with a little lime juice to prevent browning*
  • Once chicken has cooked and removed from the pan to rest, return the pan over medium heat and add lime juice, orange juice, soy sauce, minced garlic, cumin, oregano, and salt. Cook for 2-3 minutes until slightly reduced.
  • Assemble Cuban bowls by mixing rice and black beans, and topping with cubed chicken, pineapple, and avocado. Drizzle each bowl with the Cuban sauce before serving. Enjoy!
