Easy Cuban chicken and rice bowls with black beans are a healthy, filling, and flavorful dinner option. These Cuban bowls have protein-packed chicken breast, filling brown rice, tasty black beans, sweet pineapple, creamy avocado, and zesty lime and orange, all perfectly seasoned and drizzled with Cuban sauce.

I love making a rice bowl for dinner. They are easy to make, are very filling, and are a healthy alternative to so many dinner recipes. This Cuban bowl recipe is one of my favorites to make, and even the kids love to eat this for dinner. It is as easy as throwing all of the ingredients together into a bowl, yet it tastes as good as a gourmet meal. These Cuban bowls in particular are absolutely packed with flavors! You will love the combination of sweet, salty, spicy, creamy, and even fruity flavors, all in one bowl! I know that it sounds like a bit much, but I promise that they all mesh together so well, and once you try it, you will want to make this easy Cuban recipe on a regular basis! 

To make this rice bowl with black beans, you need boneless skinless chicken breasts, brown rice (you can cook this ahead of time), a drained and rinsed can of black beans, cubed pineapple, diced avocado, a juiced lime and orange, and the seasonings listed below. I find that this Cuban bowl recipe is easier to make if I have all of the ingredients prepped in advance. Once everything is prepped, cook your chicken in a skillet with olive oil, salt, and pepper. Once it is cooked, take it out of the pan, and add in lime juice, orange juice, soy sauce, minced garlic, cumin, oregano, and salt. Let this cook for a few minutes. Now you are ready to assemble your bowls! Mix together the rice and black beans as your base layer. Then top that with the chicken, pineapple, and avocado. Drizzle the sauce that you made in the skillet over the top. Your rice bowl will be ready to enjoy in no time at all!

Ingredients For Your Cuban Rice Bowl

  • 1 lb. boneless chicken breasts
  • salt and pepper to season chicken
  • 1 Tbsp. olive oil
  • 4 cups cooked brown rice
  • 1 15oz. can black beans, drained and rinsed
  • 1 small fresh pineapple, cubed
  • 1 large avocado, diced
  • 1 large lime, juiced
  • 2 oranges, juiced
  • 2 tsp. chopped garlic
  • 2 tsp. ground cumin
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 4 tsp. low sodium soy sauce

How to Make Your Cuban Rice Bowl with Black Beans

Step 1: Cook rice according to package directions and set aside.

Step 2: Add olive oil to a large skillet over medium-high heat. Season chicken breasts with salt and pepper to taste. Cook chicken until the cooked through and internal temperature reaches 165 degrees. Remove from the skillet and allow it to rest.

Step 3: While the chicken is cooking, chop pineapple, and avocado. *you can toss the avocado with a little lime juice to prevent browning*

Step 4: Once chicken has cooked and removed from the pan to rest, return the pan over medium heat and add lime juice, orange juice, soy sauce, minced garlic, cumin, oregano, and salt. Cook for 2-3 minutes until slightly reduced.

Step 5: Assemble Cuban bowls by mixing rice and black beans, and topping with cubed chicken, pineapple, and avocado. Drizzle each bowl with the Cuban sauce before serving. Enjoy!

Storage & Leftovers

Leftover Cuban rice bowls can be stored in a sealed container in the fridge for up to 3 days. Individual portions can be reheated in the microwave. These are also a great idea for meal prep! If you know that you aren’t going to eat all of it at once, I suggest storing the sauce in a separate container. Make sure that all of the ingredients, including the sauce, have completely cooled before you put them in the fridge.

Sure! I recommend brown, but you can use any type of rice that you enjoy.

Can I use canned pineapple instead of fresh?

I recommend using fresh pineapple in these bowls. Canned pineapple can be a little mushy. If you do end up using canned pineapple, make sure that you have drained it completely.
