To make this rice bowl with black beans, you need boneless skinless chicken breasts, brown rice (you can cook this ahead of time), a drained and rinsed can of black beans, cubed pineapple, diced avocado, a juiced lime and orange, and the seasonings listed below. I find that this Cuban bowl recipe is easier to make if I have all of the ingredients prepped in advance. Once everything is prepped, cook your chicken in a skillet with olive oil, salt, and pepper. Once it is cooked, take it out of the pan, and add in lime juice, orange juice, soy sauce, minced garlic, cumin, oregano, and salt. Let this cook for a few minutes. How to Make Your Cuban Rice Bowl with Black Beans
Step 1: Cook rice according to package directions and set aside.
Step 2: Add olive oil to a large skillet over medium-high heat. Season chicken breasts with salt and pepper to taste. Cook chicken until the cooked through and internal temperature reaches 165 degrees. Remove from the skillet and allow it to rest.
Step 3: While the chicken is cooking, chop pineapple, and avocado. *you can toss the avocado with a little lime juice to prevent browning*
