Easy One Pan Pineapple Chicken Tacos

Ingredients
  

  • 2-3 chicken breast, cut into bite size pieces
  • 1 Tbsp. olive oil
  • 2 tsp. cumin
  • 2 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 Tbsp. honey
  • 1 lime, juiced
  • 1 1/2 cups chopped pineapple

For Serving

  • 8 fajita size tortillas
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • salsa, lime wedges, sour cream

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add chicken, cumin, paprika, chili powder, onion powder, garlic powder, salt, pepper, honey, and lime juice. Toss to coat chicken well.
  • Cook chicken for 6-7 minutes or until chicken is golden brown and cooked through.
  • Once chicken is cooked, add pineapple and continue cooking on medium-low for 3-4 minutes to carnalize the pineapple.
  • Warm tortillas on a skillet or in the microwave. Spoon pineapple chicken into tortillas and top with your choice of cilantro, avocado, salsa, sour cream, etc. Enjoy!
