Easy One Pot Creamy Chicken Cordon Bleu

This easy one pot creamy chicken cordon bleu is an easy version of this classic recipe, making it perfect for a weeknight dinner. With rotini pasta, tender chicken, flavorful ham, a creamy base, and melty cheese, you can’t go wrong with this easy chicken cordon bleu recipe.

Ingredients
  

  • 8 oz. rotini pasta cooked to all-dente
  • 2 medium boneless skinless chickien breast, cut into cubs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 8 oz cubed ham
  • 3/4 cup low sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 1 Tbsp. Cornstarch
  • 2 Tbsp. unsalted butter
  • 8 oz. Monterrey Jack cheese, shredded
  • 1 cup mozzarella cheese

Instructions
 

  • Cook pasta to al-dente, rinse, and set aside.
  • Season chicken with salt and pepper and add to a large skillet with 1 Tbsp. olive oil. Cook over medium-high heat until cooked through and no longer pink. Remove from skillet and set aside.
  • In a small bowl whisk Greek yogurt and cornstarch until combined. Set aside. (this will keep the Greek yogurt from curdling)
  • In the same pot the chicken was cooked in, melt butter over medium heat. Whisk in chicken broth and Greek yogurt until smooth.
  • Add shredded Monterey cheese until melted and creamy. Season with salt and pepper if desired.
  • Add cooked chicken, cubed ham, and pasta into cream sauce and stir to combine.
  • Sprinkle with mozzarella cheese, cover for a couple minutes and allow cheese to melt. Serve immediately, Enjoy!
