2mediumboneless skinless chickien breast, cut into cubs
1/2tsp.salt
1/4tsp.pepper
8ozcubed ham
3/4cuplow sodium chicken broth
1/2cupplain Greek yogurt
1Tbsp.Cornstarch
2Tbsp.unsalted butter
8oz.Monterrey Jack cheese, shredded
1cupmozzarella cheese

Cook pasta to al-dente, rinse, and set aside.
Season chicken with salt and pepper and add to a large skillet with 1 Tbsp. olive oil. Cook over medium-high heat until cooked through and no longer pink. Remove from skillet and set aside.
In a small bowl whisk Greek yogurt and cornstarch until combined. Set aside. (this will keep the Greek yogurt from curdling)
In the same pot the chicken was cooked in, melt butter over medium heat. Whisk in chicken broth and Greek yogurt until smooth.
Add shredded Monterey cheese until melted and creamy. Season with salt and pepper if desired.
Add cooked chicken, cubed ham, and pasta into cream sauce and stir to combine.
Sprinkle with mozzarella cheese, cover for a couple minutes and allow cheese to melt. Serve immediately, Enjoy!
