  • 8 oz. rotini pasta cooked to all-dente
  • 2 medium boneless skinless chicken breast, cut into cubes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 8 oz cubed ham
  • 3/4 cup low sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 1 Tbsp. Cornstarch
  • 2 Tbsp. unsalted butter
  • 8 oz. Monterey Jack cheese, shredded
  • 1 cup mozzarella cheese

How to Make This Easy Chicken Cordon Bleu Recipe

INSTRUCTIONS

Step 1: Cook pasta to al-dente, rinse, and set aside.

Step 2: Season chicken with salt and pepper and add to a large skillet with 1 Tbsp. olive oil. Cook over medium-high heat until cooked through and no longer pink. Remove from skillet and set aside.

Step 3: In a small bowl whisk Greek yogurt and cornstarch until combined. Set aside. (this will keep the Greek yogurt from curdling)

Step 4: In the same pot the chicken was cooked in, melt butter over medium heat. Whisk in chicken broth and Greek yogurt until smooth.
