Easy Tortellini Alfredo Recipe (with Chicken and Broccoli)

This Tortellini Alfredo Recipe with Chicken and Broccoli is easy to make and is even more delicious than the one from Olive Garden! It combines chicken and broccoli with your favorite tortellini and a homemade, rich and creamy alfredo sauce. This pasta dish can be prepared in no time at all and makes a tasty dinner entree!

Ingredients
  

  • 1 lb. chicken cooked and cubed
  • 1 tsp. olive oil
  • 2 tsp. minced garlic
  • 1 1/2 cups low sodium chicken broth
  • 1 1/2 cups half and half I use fat free
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 20 oz. tortellini I like Rana refrigerated tortellini
  • 3 cups broccoli florets
  • 8 oz. fat free cream cheese, softened and cubed
  • 1/2 cup grated parmesan cheese

Instructions
 

  • In a large pot heat olive oil over medium-high heat.
  • Add minced garlic and cook for 30 seconds.
  • Add chicken broth, half and half, salt and pepper, and bring to a boil.
  • Once boiling add tortellini and broccoli florets, cover and cook for 4-5 minutes or until the broccoli is bright green, stirring occasionally.
  • Lower heat and stir in softened cubed cream cheese and shredded parmesan cheese until melted.
  • Add cooked cubed chicken and stir until combined.
  • Serve immediately and top with parmesan cheese if desired. Enjoy!
