1/2 cup applesauce 1 1/2 cups granulated sugar 1 Tbsp. vanilla 2 cups all-purpose flour 1/2 cup unsweetened cocoa powder 1 1/2 tsp. baking soda 1 tsp. salt 3 cups finely shredded zucchini, do not drain 1 1/2 cup semi-sweet chocolate chips

preheat oven to 350 degrees and grease a 9x13 baking pan, or line it with parchment paper.
In a large mixing bowl combine applesauce, sugar, and vanilla until fully incorporated.
Add flour, cocoa powder, baking soda, and salt. Mix until combined. *Batter will be dry*
Fold in zucchini and allow batter to rest for 5 minutes.
Gently stir in chocolate chips until well combined.
Spread brownie batter into prepared baking pan. Bake in preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
Serve warm with a scoop of vanilla ice cream if desired. Enjoy!
