This Healthy Zucchini brownies Recipe are a rich, indulgent chocolate treat that you can enjoy without feeling guilty. With applesauce, zucchini, semi-sweet chocolate chips, sugar, flour, and cocoa powder, these zucchini brownies are just as moist and decadent as traditional brownies, but with a healthier twist!

Ingredients
  

  • 1/2 cup applesauce
  • 1 1/2 cups granulated sugar
  • 1 Tbsp. vanilla
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 3 cups finely shredded zucchini, do not drain
  • 1 1/2 cup semi-sweet chocolate chips

Instructions
 

  • preheat oven to 350 degrees and grease a 9x13 baking pan, or line it with parchment paper.
  • In a large mixing bowl combine applesauce, sugar, and vanilla until fully incorporated.
  • Add flour, cocoa powder, baking soda, and salt. Mix until combined. *Batter will be dry*
  • Fold in zucchini and allow batter to rest for 5 minutes.
  • Gently stir in chocolate chips until well combined.
  • Spread brownie batter into prepared baking pan. Bake in preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
  • Serve warm with a scoop of vanilla ice cream if desired. Enjoy!
