  • 1/2 cup applesauce
  • 1 1/2 cups granulated sugar
  • 1 Tbsp. vanilla
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 3 cups finely shredded zucchini, do not drain
  • 1 1/2 cup semi-sweet chocolate chips

How to Make Zucchini Brownies

Step 1: Preheat the oven to 350 degrees and grease a 9×13 baking pan, or line it with parchment paper.

Step 2: In a large mixing bowl combine applesauce, sugar, and vanilla until fully incorporated.

Step 3: Add flour, cocoa powder, baking soda, and salt. Mix until combined. *Batter will be dry*

Step 4: Fold in zucchini and allow batter to rest for 5 minutes.

Step 5: Gently stir in chocolate chips until well combined.

Step 6: Spread brownie batter into prepared baking pan. Bake in preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
