Ingredients
  

  • 1 lb. ground beef
  • 1 small yellow onion, chopped
  • 1 cup shredded carrots
  • 1/2 cup celery, diced
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • 1/2 tsp. pepper
  • 3 cups chicken broth, low sodium
  • 4 small russet potatoes, peeled and chopped
  • 3 Tbsp. unsalted butter
  • 2 Tbsp. all purpose flour
  • 1 cup milk
  • 16 oz. Velveeta cheese, cubed

Instructions
 

  • In a large pot cook ground beef and onion until brown. Drain excess grease.
  • Add carrots, celery, basil parsley, and pepper, and cook until slightly softened, about 5 minutes.
  • Add chicken broth and potatoes. Cover and bring to a simmer over medium heat and cook until potatoes are tender.
  • In a small skillet melt butter over medium heat. Reduce heat to low and whisk in flour until combined. Slowly whisk in milk and stir until slightly thickened.
  • Pour flour mixture into pot and stir to combine.
  • Add cubed Velveeta cheese and stir until cheese has melted. Serve warm and Enjoy!
