I absolutely love a cozy, warm bowl of soup, especially in the chillier fall and winter months. This homemade cheeseburger soup with potatoes is one of my family’s favorites. My kids love the idea of eating a “cheeseburger in a bowl” and I love that they are getting a dinner that is full of hidden veggies. This creamy, cheesy, filling soup is the perfect weeknight dinner, and even the leftovers are delicious! This flavorful soup will quickly become a family favorite.

While the ingredient list may make this recipe look complicated, it is actually super simple to make! You can even prep most of the ingredients in advance. To start making this cheeseburger soup recipe, go ahead and chop all of your veggies. Having this step out of the way will make everything else go super quickly! Once everything is prepped, go ahead and cook your beef and onions, then drain the grease. Add in the celery, carrots, basil, parsley, and pepper and cook the mixture until the celery and carrots have started to soften. Next, you’ll add in your chicken broth and the potatoes. Cover the pot and let this mixture come to a simmer. This is when it will really start to smell delicious!  Let it cook until the potatoes are soft enough to eat. The next few steps are to thicken the soup and make it creamy and cheesy! While the mixture is simmering, in a separate pan, melt the butter and whisk in the flour and milk. Add this mixture into the pot and mix it all together. The last step (and my favorite part) is to add in the Velveeta! You can’t have cheeseburger soup without cheese, right? Mix in the cheese until it is melted, and your cheeseburger soup with potatoes will be ready to enjoy!

  • 1 lb. ground beef
  • 1 small yellow onion, chopped
  • 1 cup shredded carrots
  • 1/2 cup celery, diced
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • 1/2 tsp. pepper
  • 3 cups chicken broth, low sodium
  • 4 small russet potatoes, peeled and chopped
  • 3 Tbsp. unsalted butter
  • 2 Tbsp. all purpose flour
  • 1 cup milk
  • 16 oz. Velveeta cheese, cubed

How to Make Your Cheeseburger Soup with Potatoes

Step 1: In a large pot cook ground beef and onion until brown. Drain excess grease.

Step 2: Add carrots, celery, basil parsley, and pepper, and cook until slightly softened, about 5 minutes.

Step 3: Add chicken broth and potatoes. Cover and bring to a simmer over medium heat and cook until potatoes are tender.

Step 4: In a small skillet, melt butter over medium heat. Reduce heat to low and whisk in flour until combined. Slowly whisk in milk and stir until slightly thickened.

Step 5: Pour flour mixture into pot and stir to combine.

Step 6: Add cubed Velveeta cheese and stir until cheese has melted.
