It's that time of year again when the weather starts to cool down and all you want is a big pot of soup to warm you up. This One Pot Tomato Tortellini Soup is the perfect comfort food for those chilly autumn nights. It's easy to make, hearty, and delicious!

Ingredients
  

  • 2 9 oz. packages frozen cheese tortellini
  • 1 Tbsp. olive oil
  • 1 small yellow onion, diced
  • 1 Tbsp. minced garlic
  • 2 14.5 oz. cans petite diced tomatoes, undrained
  • 1 28 oz can crushed tomatoes, undrained
  • 3 Tbsp. tomato paste
  • 2 Tsp. Italian seasoning
  • 1 tsp. salt
  • 1 tsp. pepper
  • 4 cups low sodium chicken broth
  • 1/2 cup shredded parmesan cheese
  • 1 cup milk

Instructions
 

  • Heat olive oil in a large pot over medium high heat. Add onion and cook for 3-5 minutes or until tender. Add minced garlic and cook for an additional minute.
  • Add diced tomatoes, crushed tomatoes, tomato paste, chicken broth, Italian seasoning, salt, and pepper to pot and mix to combine. Bring to a boil then reduce heat to simmer and cook for 10 minutes.
  • Add cheese tortellini to the pot and cook an additional 7-8 minutes, or until tortellini is soft.
  • Whisk in milk and parmesan cheese until smooth and creamy. Remove from heat and serve immediately with a green salad or a loaf of French bread. Enjoy.
