Slow Cooker Chicken Fajitas

Slow Cooker Chicken Fajitas are such an easy way to have all the delicious flavors of traditional fajitas without the fuss. Tender chicken, bell peppers, onions, and seasoning simmered to perfection in the slow cooker. Great for busy weeknights or hot Summer days when you don't want to turn on your oven or stove.

Ingredients
  

  • 4 chicken breasts boneless and skinless
  • 1 14.5 oz. can petite diced tomatoes use tomatoes with green chilies for extra spice
  • 3 bell peppers, cored and sliced I prefer 1 red, 1 yellow, 1 green
  • 1 yellow, sliced
  • 2 tsp. minced garlic
  • 1 pkg. fajita seasoning
  • 2 Tbsp. lime juice
  • 1 Tbsp. honey
  • tortillas and your favorite toppings

Instructions
 

  • Add half a can of diced tomatoes, half the peppers, and half the onions to the bottom of a 6-7 quart slow cooker.
  • Season both sides of the chicken breasts and add them on top of the veggies.
  • Add remaining diced tomatoes, peppers, and onions.
  • Sprinkle minced garlic over veggies.
  • Cover and cook on high for 3-4 hours, or on low for 4-6 hours.
  • Once chicken has cooked through, remove and cut into slices or shred
  • Place chicken back into crock pot.
  • In a small mixing bowl whisk together lime juice and honey.
  • Toss chicken and veggies with honey and lime mixture.
  • Serve warm with tortillas and your favorite toppings. Enjoy!
