Slow Cooker Chicken Fajitas are such an easy way to have all the delicious flavors of traditional fajitas without the fuss. Tender chicken, bell peppers, onions, and seasoning simmered to perfection in the slow cooker. Great for busy weeknights or hot Summer days when you don’t want to turn on your oven or stove.
Easy Slow Cooker Chicken Fajitas
Crockpot chicken fajitas are perfect for family dinner. Lean protein and lots of veggies make this a healthy and flavorful recipe. We also love our Sheet Pan Chicken Fajitas and our Slow Cooker Queso Chicken Tacos.
Crockpot chicken fajita ingredients
- Chicken breasts: I prefer to stick with chicken breasts for this recipe. If using chicken thighs, the chicken might fall apart and shred too easily.
- Diced tomatoes: You can use regular canned diced tomatoes, or add the tomatoes with green chilies.
- Bell Peppers: I like to use a combination of red, yellow, and green, but feel free to use whatever color you prefer.
- Yellow Onion: Yellow or red onions both work well.
- Minced garlic: I prefer to use the minced garlic in a jar, but if you prefer to use fresh garlic cloves that works great.
- Fajita Seasoning: I like to use a package of fajita seasoning because its convenient. If you have a favorite homemade fajita seasoning feel free to use that.
- Lime juice: Fresh lime juice is always best, but bottled will also work.
- Honey: Honey balances the acidity of the tomatoes and lime, but you can omit if preferred.
- Tortillas and toppings: Use your favorite tortillas top with your favorite toppings.
How to make slow cooker chicken fajitas
- Add half a can of diced tomatoes, half the peppers, and half the onions to the bottom of a 6-7 quart slow cooker.
- Season both sides of the chicken breasts and add them on top of the veggies.
- Add remaining diced tomatoes, peppers, and onions.
- Sprinkle minced garlic over veggies.
- Cover and cook on high for 3-4 hours, or on low for 4-6 hours.
- Once chicken has cooked through, remove and cut into slices or shred.
- Place chicken back into crock pot and toss with honey and lime mixture.
- Serve warm with tortillas and your favorite toppings. Enjoy!
Tips and variations
- Serve fajita mixture over rice, quinoa, or make it into a burrito.
- Use corn tortillas instead of flour.
- If you prefer your veggies more crisp, wait until about an hour before chicken is ready and add veggies then.
- Store leftovers in the fridge for up to 3 days.
- Use your favorite homemade fajita seasoning instead of a package.

Ingredients
- 4 chicken breasts boneless and skinless
- 1 14.5 oz. can petite diced tomatoes use tomatoes with green chilies for extra spice
- 3 bell peppers, cored and sliced I prefer 1 red, 1 yellow, 1 green
- 1 yellow, sliced
- 2 tsp. minced garlic
- 1 pkg. fajita seasoning
- 2 Tbsp. lime juice
- 1 Tbsp. honey
- tortillas and your favorite toppings
Instructions
- Add half a can of diced tomatoes, half the peppers, and half the onions to the bottom of a 6-7 quart slow cooker.

this was simply delicious! I made it for a Mexican themed dinner (the carnitas too, can’t rave enough about that recipe as well) and everyone devoured it!! I had some leftover sauce and although I wanted to just eat it with a spoon, Thank you for your wonderful recipes!
