Okay, an honest moment here, when I was a kid and I knew that it was chicken and rice night, I was not thrilled.  In my house, that meant shredded chicken mixed with rice and a can of cream of something or other soup, baked in the oven.  It just felt so plain.  Now that I’ve found a way to make it delicious with vegetables and spices,  it’s a dinner that I always look forward to!  An added plus – it’s made in the slow cooker – yay!

This slow cooker chicken and rice recipe is so easy and delicious! It’s perfect for those busy weeknights when you don’t have time to cook. Simply throw all the ingredients in a crock pot, set it, and forget about it. This dish will be ready by dinnertime with minimal effort on your end.

  • Chicken Breasts
  • Long Grain White Rice

Storing & Reheating Crockpot Chicken and Rice

Chicken in rice is one of those recipes that tastes just as good leftover as it does fresh!  I love the way that the flavors really soak into the rice over time.  If you have any leftovers, this crockpot chicken and rice will last in the fridge for up to 4 days.  

To store your chicken and white rice, transfer the mixture into a sealed container and place it in the fridge once it is completely cooled.  To reheat, microwave, or cook in the oven until it is warm.  You can even put it back in the crockpot, if you prefer.  

If it seems a little dry, you can add a little more chicken broth into the mixture, then stir and reheat.  This can happen when the rice soaks up a lot of the liquid.  You can also freeze this chicken and rice with veggies for up to a month.  Make sure that you put it in a sealed container.   

Completely thaw and then reheat either in the crockpot or in the oven.

Tips For Making the Best Slow Cooker Chicken & Rice

  • Keep the crockpot closed as long as you can to make sure that all of the flavors soak in properly – you won’t regret this, the white rice soaks up so much yummy flavor!
  • If your chicken and rice mixture is done cooking but you aren’t ready to eat yet, turn your slow cooker to the “warm” setting.  You’ll know it’s done when it’s bubbling on top and the vegetables are cooked through.
  • If using brown rice, up the chicken broth to 3 cups.
  • If using fresh vegetables add them in during the first step.

Substitutions and Variations

  • If you don’t have fresh chicken on hand, you can shred a rotisserie chicken and add it into the mixture.  You can add it in prior to cooking the mixture, or closer to when you are ready to eat.
  • You can use brown rice instead of long-grain white rice, but be sure to add the extra chicken broth mentioned above.

What To Serve/Pair With Your Slow Cooker Chicken & Rice Recipe

  • If you would like something as a side with your chicken and rice entree, add a side salad topped with some extra veggies and croutons.  You could also serve this chicken and rice with freshly baked rolls.
  • My favorite dessert pairing with chicken and rice is a warm peach cobbler.  There’s something about a fresh cobbler that adds to the comfort food feeling from the chicken and rice with veggies.

Crock Pot Chicken and Rice FAQs

Do I have to use the pre-mixed frozen veggies or can I choose my own?

You can definitely use your own mix of veggies, I’ve just found that all of my favorites for this chicken and rice mixture are already included in the frozen mix.

Can I use another variation of cream soup?

Sure!  Cream of mushroom provides flavors that mix well with the ingredients and spices in this chicken and rice recipe, but you can also use cream of celery or cream of chicken in yours.  It will still be delicious!

What if my rice soaks up too much liquid?   

This is unlikely to happen unless it has been in the crockpot too long, but if you do run into this, just add about ½ cup of chicken broth at a time and stir.  Repeat this until it’s at your desired consistency.  If you have to do this, you may want to add more spices, too.

Do I need to line my slow cooker before making this chicken and rice recipe?

You don’t technically have to line your slow cooker, but I would recommend it if you want your cleanup to be a little easier.  This would also help keep the rice from sticking in the corners.

Ingredients
  

  • 2 boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1⅔ cups long grain white rice
  • 1 (12 ounce) bag frozen mixed vegetables
  • 2 cloves garlic (minced)
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 1 tbsp Worcestershire sauce
  • cups chicken broth
  • 1 small yellow onion (dice)
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 2 cups cheddar cheese (shredded)

Instructions
 

  • Add chicken, rice, garlic, black pepper, Italian seasoning, salt, Worcestershire sauce, onion, chicken broth, and mushroom soup in the slow cooker. Stir thoroughly combine all the ingredients.
  • Cover and cook on high for 3 1/2 hours or until rice is completely soft and has absorbed the chicken broth. 30 minutes before the cooking time is complete pour frozen vegetables over the top of the rice.
  • Then add in the shredded cheese and gently stir into the rice. Cover and let the cheese melt for 5-10 minutes.
  • Serve while hot and enjoy!

Notes

  1. Hi I wanna make this tonight but saw the cook time.. is that just for a crock pot? I’m using an instant pot that usually takes a shorter time.

    Did not have chicken breast. Used boneless And skinless chicken thighs added extra chicken broth did not have cream of mushroom added butter with veggies turned out good. Thanks for recipe.
