Orange Poppy Seed Muffins

Can you say yummy ? Seriously these poppy seed muffins are A-M-A=Z-I-N-G! The are light and fluffy, with a hint of a sweet orange twist glaze. What better way to start your morning than with a orange poppy seed muffin! This recipe also works great for bread.

How to make Poppy seed Muffins

  1. Beat together eggs, oil, and sugar.
  2. Mix together salt, baking powder, flour, and poppy seeds in a separate bowl. Once they are mixed well add to the egg mixture.
  3. Next, add milk, almond extract, butter extract, and vanilla extract to batter. Mix well.

Finally, pour batter into a well greased or lined muffin tin, or two medium bread pans. If using a bread pan make sure use grease and flour your pan. Bake at 350 for 12 minutes, or for bread 1 hour.

Orange Glaze

This sweet orange glaze is what sets these muffins apart from other poppy seed muffins. It gives them a little extra kick, and melts in your mouth.

For the orange glaze simply mix together powered sugar, frozen orange juice concentrate, vanilla extract, almond extract, and butter extract.

Frost and glaze muffins/bread while hot, and allow to dry.

Ingredients

  • 3 eggs

  • 2 1/4 cups sugar

  • 1 1/8 cups oil

  • 1 1/2 tsp. salt

  • 1 1/2 tsp. baking powder

  • 3 cups flour

  • 3 tbsp. poppy seeds

  • 1 1/2 cups milk

  • 1 1/2 tsp. butter extract, and 1/2 tsp for glaze

  • 1 1/2 tsp. almond extract, and 1/2 tsp for glaze

  • 1 1/2 tsp. vanilla extract, and 1/2 tsp for glaze

  • 3/4 cup powdered sugar

  • 1/2 cup of thawed orange juice concentrate (more if glaze is to thick)

Notes

  • For lemon poppy seed muffins/bread, you could easily substitute the orange juice concentrate for lemonade concentrate, or lemon juice.
