These delicious Almond Joy Cookies are just like the candy bar in a cookie form. So soft and chewy and packed with coconut, almonds, and chocolate. The perfect dessert for a quick treat or for a holiday get-together.
Ingredients For Almond Joy Cookies
These are some of the easiest cookies that you could ever make. They only require 4 ingredients that you probably already have on hand. The best part is they require no flour, eggs, or butter so they are gluten-free.
- Sweetened Flaked Coconut: This is what makes this just like an almond joy candy bar. I have had several people ask me where to find this. It is located in the baking aisle and is usually by the chocolate chips.
- Sweetened Condensed Milk: This is what holds everything together. If you skip this ingredient the cookies will just fall apart.
- Almonds: I prefer to use lightly salted and roasted almonds. You can chop them to the size you want or add them whole.
- Chocolate Chips: Semi-sweet chocolate chips work the best in this recipe. They add a subtle sweet flavor and melt better while baking.
How To Make Almond Joy Cookies
- Preheat oven to 325 Degrees F. with rack in the middle position. Prepare a large baking sheet by lining it with parchment paper and set aside.
- In a large mixing bowl, combine the sweetened condensed milk, chopped almonds, 2 cups of chocolate chips, and flaked coconut. Stir until well combined.
- With a medium cookie scoop, place the dough on the prepared baking sheet. Then, gently flatten the cookies with a spatula to pack the dough together.
- Bake for 13-14 minutes or until the coconut in the dough begins to turn golden brown. Remove from oven and cool on a cookie rack. If you do not have a cookie rack, cool them on a piece of parchment paper on the counter.
- Add 1 cup of chocolate chips to a small bowl. Microwave for 30-second intervals, stirring in between until the chocolate completely melted.
- While the chocolate is still hot, transfer to a small sandwich bag and cut the tip off with a pair of scissors. Drizzle melted chocolate over the top of the cookies and allow to cool before serving.
Variations
Change The Nuts: These yummy cookies are also amazing with chopped pecans or walnuts.
Add Caramel: My kids love when I add a piece of caramel to the center of each cookie.
Remove The Chocolate Drizzle: These cookies are so tasty on their own. To simplify the recipe you can skip adding the chocolate drizzle on top. This makes it so you only have to buy one bag of chocolate chips.
How To Store
On The Counter: Make sure your cookies are completely cool before storing them. Place them in an air-tight container or on a plate and wrap them with plastic wrap. These cookies will maintain their taste and texture for 3-4 days. Keep them covered or they will dry out and become stale.
In The Freezer: 4 Ingredient almond joy cookies can be stored in the freezer for up to 3 months in a sealed container. Thaw on the counter before serving.
Tips For The Best Coconut Cookies
- Make sure to line your baking sheet with parchment paper. Using cooking spray or silicone mates dramatically change the cook time on these coconut cookies.
- Remove from the baking sheet and cool to avoid over cooking.
- Chop almonds so they are easier to eat.
