Easy Cajun Shrimp Foil Packets packed with shrimp, sausage, fresh veggies, butter, and Cajun spices. It’s a full meal that can be grilled or baked and has almost no mess to clean up.

Cajun shrimp foil packets are one of my family’s favorite meals that can be enjoyed all year long. Made with all the classic Cajun shrimp boil ingredients, but packed into a no-mess foil pack. These are perfect for a busy night when you want a delicious meal. But you don’t want to heat up the house and pull out all your pots and pans.

Ingredients for Cajun Shrimp Foil Packets

  • Shrimp: I recommend using extra large or even jumbo shrimp. Just make sure itโ€™s peeled and de-veined before cooking.
  • Smoked Sausage: I like to use Andouille sausage but most types of smoked sausage will work fine here.
  • Corn: I like to use canned corn, but fresh corn cut of the cob and frozen work great as well.
  • Zucchini or squash:
  • Bell pepper: I prefer to use red peppers because of their sweet flavor. But all different types of bell peppers work great in this meal.
  • Red onion: Even if you donโ€™t like to eat slices of red onion Iโ€™d still add them to help season the other ingredients. You can also use any type of onion that you like.
  • Garlic: Use minced garlic. But if you don’t like to mince your own garlic I like to use this Minced Garlic in a jar.
  • Olive Oil: This will help keep the exterior of the shrimp from drying and adds a little richness. It also helps the Cajun seasoning to stick to all the ingredients.

How To Make Cajun Shrimp Foil Packets

  • Preheat oven to 425 degrees F. Cut four sheets of foil, about 16-inches long, and set aside.
  • In a large bowl add shrimp, sausage, corn, zucchini, red bell peppers, red onion, olive oil and garlic. Sprinkle Cajun seasoning over the top of the mixture. Stir until everything is evenly coated.
  • Divide the shrimp mixture evenly into the 4 prepared foil sheets. Then, fold the sides of the foil over the Cajun shrimp, covering completely and sealing the packets closed.
  • Place the foil packets on a baking sheet and place them in the oven with the rack in the middle position. Bake for 25 minutes or until veggies are tender and the shrimp is cooked through.
  • Served immediately, garnished with parsley, if desired.

Can I Make These Foil Packets On The Grill?

Yes, grilling is one of my favorite ways to make this foil packet dinner. Heat the grill to 400 degrees F. Follow all the directions in the recipe card up to baking. Then place on the grill and cook for 25 – 30 minutes, turning once halfway through. Remove from grill and let rest 1-2 minutes before serving.

How to Adjust The Spicy Cajun Flavor

If you don’t like spicy food you can still enjoy this Cajun shrimp by making a few modifications. I recommend not using Andouille sausage and use a milder smoked sausage. This will take most of the heat out of this meal.

If you like spicy food and are looking for ways to heat things up. You can also add in 1 or 2 seeded diced jalapeรฑos or a can a diced green chilies. Or you can keep it simple and add a bit of cayenne pepper.

Are Cajun Shrimp Foil Packets Gluten Free?

Yes, all the ingredients used in this recipe are gluten-free. This is one of the things that I love about this recipe and why it is one of my favorite healthy recipes.

Can I Use Smoked Turkey Sausage?

Yes, turkey sausage is a great way to make these foil packs a bit healthier. Just keep in mind it doesnโ€™t brown quite as well as the standard beef/pork sausage.

Can I Use Pre-Cooked Shrimp?

Yes, since the shrimp is already pre-cooked you will want to season them separately with the Cajun seasoning. Then, add them into the foil packs the last 5 minutes of cook time. All you need to do is warm them through. If you add them at the beginning they will be rubbery and overcooked.

Ingredients
  

  • 1 lb shrimp (peeled and de-veined)
  • 12-16 oz Smoked Sausage (you can use turkey, chicken, or beef sausage, sliced into 1/4-inch rounds)
  • 1ยฝ cups whole corn kernels
  • 1 medium zucchini or squash
  • 1 large red bell pepper (chopped into ยพ pieces)
  • 1 small red onion (chopped)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 2ยฝ tbsp Cajun seasoning
