This summer salad is easy and so refreshing. Its light and healthy, with lots of yummy flavor.
This recipe is so versatile! you can add as little or as many different veggies as you want. During the summer when my garden is producing tons of veggies, I load tons more in there. You can add any variety of sweet peppers, corn, avocado, squash, and so many more.
How to make Summer Salad
- Chop all your veggies into bite size pieces, and put them in a medium to large bowl.

3. Mix in a good quality olive oil. I never really knew there were different qualities of olive oil until we went to Italy. They take it very seriously over there, and I now know that a good olive can make all the difference. You could get really creative and add a favored oil.
4. Next, squeeze fresh lemon juice over the top. I just do this to taste. I like to refrigerate this salad for a couple of hours. It gives it a chance to absorb all the flavors.
5. Salt and pepper to your liking.
6. Enjoy!

1 large English cucumber
1 1/2 cups of cherry tomatoes.
3/4 cup feta cheese (I use reduced fat)
3 tbsp. olive oil
Fresh squeezed lemon juice

Directions
